Vanilla Chia Pudding with Berries

Ingredients

  • 1 cup Lite Coconut Milk (canned)
  • 2 tsp Maple Syrup
  • 1 1/3 tsp Vanilla Extract
  • 1/3 cup Chia Seeds
  • 2/3 cup Blueberries
  • 2/3 cup Strawberries

Directions

  • In a medium-sized bowl, whisk together the coconut milk, maple syrup, and vanilla
    extract. Then whisk in the chia seeds. Place in the refrigerator for 3 hours or overnight.
  • Divide the chia pudding between bowls or containers and top with blueberries and
    strawberries. Enjoy!
